“You better cut the pizza in four pieces because I'm not hungry enough to eat six.” - Yogi Berra

Ok...next thing. This was a product of "shoot I'm stuck at school and I am very very hungry." I just could not stop thinking about dinner! Hmmm, maybe I should work on that... ... Anyway, I knew that I had a bunch of fresh vegetables and pesto at home, so I decided to do something with that.
This is what I came up with...

Pesto Pizza RollsWhat it is, is a cinnamon roll...no, a pesto pizza roll!!

First I made the basic roll dough:

Ingredients:
5 tsp Yeast
1/2 C water, warm
1 tsp sugar
1 cube Margarine, melted
2 C water, very hot
1/2 C Sugar
2 tsp Salt
2 eggs slightly beaten
6 1/2 C Flour
1/2 Gluten
(Or instead of those last two you can use 7 C bread flour)

Directions:
1. Put 1st three ingredients into bowl - set aside.
2. Mix margarine, water, sugar, and salt together
3. Add eggs and 3 C flour
4. Add yeast mixture
5. Add rest of flour and gluten (Bread flour)
6. Knead for 4 minutes
7. Put on counter, covered, to rest for 15 minutes
8. Shape into rolls - let raise until double
9. Bake at 350 degrees for 12-15 minutes

Then I spread the dough out in a rectangle, and spread pesto all over it, then pizza sauce. After that, I just chopped up a bunch of vegetables: mushrooms, yellow peppers, tomatoes, olives, and spinach. I spread those all over on top of the dough/sauces, then sprinkled cheese on top of that.
After all my ingredients were on, I rolled it up like a tube, and cut slices off of the "log" (even though I hate using that word like that). I fit 12 rolls per cookie sheet and baked them for about 15 min @ 350! It was SO GOOD!!

p.s. I also made these but put just Pesto, garlic, and a few different types of white cheese! Those are my favorite...but I can't take the credit because my mom did it first :) Thanks mom!!

Hmmm, alright well this month has been one of much cooking...some of it has worked...some of it hasn't. But I'm definitely willing to post the attempts :) Here's the first, and I'll post the next few on individual posts...not sure why, maybe so its easier to search them? I don't know..

Alright, the first attempt was one that was planned and thought about a lot...and actually attempted more than once. (Here's a quick tip, make sure you have everything you need before starting a project on a Sunday) The next time, I was smart and did it with Sarah! I have a friend on a mission who just had a brithday, so I saw this cake on a website and decided to make it! I think it actually turned out alright? The reason there is two is because we had enough leftover stuff to make another one and a friend who is going on a mission was coming over that night-so we just whipped up another one.

Okay, this may come as a shock to some of you, it was kind of fast. I thought I'd take this time to announce that I’m NOT single. I am, in fact married. My marriage officially began in May of 2009. I celebrated the event by wearing a black gown with a funny hat. Most of my close family was there, as well as an auditorium full of friends and acquaintances. I feel so lucky to have my husband, lets call him GS, in my life. Its been kind of an adjustment, having to move to a new place, make new friends, and live in another type of building part of the day, but all in all its been great! I have found that as a single girl I had far more time, but I wouldn't trade it for anything!


Online, I found seven qualities of a good husband, and the ten qualities of a good relationship. After going over these lists, I found that GS and our relationship fit both…mostly!


Here's the list of the seven qualities of a good husband, and how my GS fits each one:


7 – Handy. Handy is when you take action to solve a problem, and to be part of the solution, not part of the problem. What is that you said? How is GS handy? Well, he is always part of the solution. Here are some of the problems he is really good at solving: “hmmm, what should I do tonight?” “hmmm, its 5:30 am and I am awake, where should I go?” “Hey honey, I really want to sit in my room for 4 hours today, what can I do at my desk for that long?” Handy.


6 – Provision Oriented. Willing to help fill in the gaps, give up time to be a help. Oh man, GS is so helpful! He always wants to make sure that I don’t have anything else to do so I can focus totally on him. He really does well at helping me to align my priorities (even if I don’t want to).


5 – Humility. No one likes an arrogant man! He admits when he’s wrong! He’s the strong, silent type. Never really outwardly dominating, but I always know that GS is there, watching my every move, and is always there for me to fall back on.


4 – Adaptability. GS is really good with change. For example, due dates change regularly, even without me knowing it. If I am getting too comfortable in one part of our relationship, he takes it upon himself to adapt the situation and make sure I don’t get stuck in a rut. He also doesn’t hesitate to change things like requirements, as well as temperature on a regular, daily, hourly, basis. Also, the others involved in our relatipnship, “to make things easier”, lets call them supervisors, are totally fine with changing EVERYTHING.


3 – Sensitivity. A sensitive husband perceives the needs of his wife and looks to meet them. Oh my, GS is SO sensitive; he always tries to meet my needs. He’s always always there for me, come rain or shine. I know that even if I am having a terrible day I can (ok must) go to him. It seems like he can even sense things that I don’t even verbalize; again if I am having a hard day, he does not hesitate to meet my needs by taking my mind off of my current problem by providing something for me to focus on to take my mind off of the previous problem.

2 – Faithful/Loyal. GS is the epitome of faithful and loyal. I know that he is not going anywhere. Well, for the next two years at least. He follows through on his commitments he makes. Even if things change (see adaptability) by golly the deadlines always come. He’s honest, well mostly honest, but honest enough for me! He is very up to date on my activities; in fact, he IS all my activities, so he always knows what is going on. I also feel very included in his world, and he in mine. We spend so much time together, I don’t see how he could have time for anyone else. (Except for possibly my friend Emily).


1 – Finally, a good listener. He doesn’t always try to solve my problems, sometimes he is just there to hear them. He definitely leaves the right amount unsolved. If I just need to vent, he has plenty of space for me to fill up with my thoughts/feelings. Sometimes husbands think they need to solve all of their wives problems, but I think a really good husband is the one who just lets you talk, listens, and maybe even creates more (see Sensitivity).

I’m so lucky to have such a great husband that meets all the online requirements of what a good husband should be.

"Whatever your question is, just give them credit"

This has been...a week... A week like no other! I have never ever been at school from 5:30, 7 or 8 am till 6:30, 8, and 10 pm-all in the same week! I'm not even sure if that made sense-but I'm beyond caring at this point.

Really what this post is all about is allowing myself a ten minute break in between school/work projects; giving my brain a minute to try and prioritize my list.

I am so excited for this weekend! After my day at the professional building tomorrow I'm going to go get my hair cut, then go to ROLLA! I'll do homework/stuff Friday night, then go to St. Louis with the family on Saturday morning. (Yeah, I'm taking homework to do while they are busy...) After that, Jorin and Jantzen are in the play, Beauty and the Beast, Saturday night, and I can't wait to see them! After that, I'm going to head back to here. Yeah, hanging out with my family makes all this crazy week stuff worth it!

"Frederick! Don't swim...take the dinghy!"


Some of you may ask, what is this picture? That would be a very valid question. The obvious answer is of course, my heel...in my flip flop... Another important detail of the picture that you may notice is that I'm wearing capris...or I grew a few inches. The only reason that is important is because it means that it is now warm enough to even wear capris! But REALLY what the picture is, is a picture of a heel covered in beer. No lies. I was walking home from my friend's house and i didn't see the can of beer on the sidewalk and I barely kicked it and it got all over my foot and pants! Rude! Hopefully one can't become intoxicated by absorption ;)
Ok, thats it. I told you I couldn't post, and I'm currently 14 minutes past when I said I would be working on homework again.

A hero isn't measured by the size of his strength but by the strength of his heart

This week's adventure was a road trip to Arkansas!

There was a big 11-stake dance...well, thats how it was advertised anyway...down in Springdale! After the dance, Beth and Kim organized a camping trip for all of us Springfield-ites so we didn't have to drive the almost three hours home after the dance. It was a blast! We roasted hot dogs (ok they roasted hot dogs) and marshmallows and just hung out. There were a few really pretty lakes around and some people took walks around. We had such a good time!

When I finally went to bed (3:00 am) I was able to "sleep" for about 3 hours before waking up. Yeah, apparently in Arkansas in April its really really cold at night. Especially if you don't close the door of your tent! (not my fault, I was totally the first one to go in!) I also learned some other important things on the trip:
  • ash is very capable of looking like snow, (even when it is 60 degrees outside), baffling the minds of all...alright not all, but some...alright not even some, but one...(no it was NOT me)
  • garden vegetable-fiber rich wheat thins taste a lot like cardboard
  • when you aren't allowed to eat sugar, an open box of white cheddar wheat thins just might disappear in under 12 minutes
  • make friends with your server at Cracker Barrel-she just might bring you two glasses of water and continue to refill both of them
  • 7 hrs of sleep in two days + phone calls while you are talking a nap may cause you to not remember very important details...such as the name of your blind date for that night...
  • Hoodies are by far the greatest invention ever. I hope the brilliant person (probably a woman) who came up with the idea is very rich somewhere-sitting on a beach-reading a book (not a text book)-being fed grapes----you get the picture...
I LOVED it though! I haven't camped in ages and it was so fun!



Finally, you may not hear from me for, well at least two days. My life is going to be CRAZY till Wednesday. Everyone hope that I make it through!! ...or don't if you are getting sick of these blogs... :)

This is a story of a girl...

Once upon a time, there was a girl. This girl went to Missouri State University. Courtesy of Missouri State University, there was an Easter Break. (Bless you MSU). On Thursday of Easter Break, she decided to go home to spend some time on the farm. On the farm she could do all sorts of fun things, like see the polish chickens...

Then one morning, her friend Kye of Chicago came to visit her! Being a city boy, he got to have all sorts of new farm experiences like playing with a steer, (learning the difference between a bull and a steer), scaling a mountain of hay, and catching a chicken!


That night, the girl, along with her mom, dad, and brother got to shovel the biggest pile of manure ever!!
Yeah, as gross as it is, she actually didn't mind it at all. She had forgotten how good it feels to work outside. She also got to have the joy of experiencing something 100% new: shoveling manure in the rain. (also not bad, but slightly more disgusting)


Needless to say, the girl showered immediately.

And they all lived happily ever after.
